Thai Mango Salad with Peanut Dressing
Inspired by Cookie and Kate (see original here) | Serves 2
Ingredients
SALAD
- 1/2 Lettuce (Iceberg)
- 1 red bell pepper
- 1 large ripe mango
- 1-2 green onions
- 2 cups seasonal crunchy vegetables (e.g. carrots, red cabbage, cucumber)
- 1/4 cup roasted peanuts
- 1/4 cup chopped fresh coriander
DRESSING
- ¼ cup peanut butter
- 1/8 cup lime juice and some extra to taste (1-2 limes)
- 1 Tbsp tamari or soy sauce
- 1 Tbsp apple cider vinegar
- 2 Tbsp honey or maple syrup
- 1 tsp sesame oil
- 2 cloves garlic, pressed or minced
- Pinch of red pepper flakes (if you like spice)
Method
- Chop the lettuce into bite sized pieces. Chop the red bell pepper and seasonal vegetables and peel carrots into ribbons (if using).
- To assemble the salad, simply combine all of the salad ingredients in a large serving bowl.
- To prepare the dressing, combine all of the ingredients in a liquid measuring cup or bowl, and whisk until combined.
- When you’re ready to serve, drizzle the dressing over the salad, and toss to combine. Serve immediately.
