Moelleux au chocolat
a.k.a. Chocolate Lava Cakes
Original recipe by Marmiton | Makes 6 small individual cakes or one large cake
Ingredients
- 250g high-quality dark chocolate (70% cocoa), finely chopped
- 175g butter, cut into pieces
- 125g powdered sugar
- 75g white flour
- 5 eggs
Method
- Gently melt the chocolate in a water bath.
- Add the butter to the melted chocolate, one piece at a time, stirring gently, until you have a smooth cream. Let the mixture cool slightly.
- Mix the flour and powdered sugar in a separate large bowl. Add the whole eggs and mix until you have a smooth batter.
- Add the melted chocolate/butter mixture to the batter and mix.
- Butter the bottom and sides of 6 individual molds (e.g. in a muffin pan), or one large pan and fill them evenly with the chocolate batter
- About 30 minutes before you want to serve the lava cakes, preheat the oven to 200°C.
- Bake the small molds for around 10 minutes, or 15 minutes for the large pan. Do not over-bake them! They are meant to be liquid in the middle and will further settle outside the oven.
- Let the lava cake(s) cool slightly, then serve warm which whipped cream or ice cream.
