Caesar salad dressing

Makes 3/4 cup | 6 servings

Ingredients

  • 2 -6 anchovy fillets (to taste)
  • 2 cloves garlic
  • 1 large egg yolk
  • 1 Tbsp lemon juice
  • 3/4 tsp Dijon mustard
  • 1/2 cup + 1 Tbsp (140ml) olive oil
  • 1 tsp Worcestershire sauce (optional)
  • 1/3 cup grated parmesan (and more to taste)
  • salt
  • pepper

Method

  1. Combine egg yolk, lemon juice, anchovies, Worcestershire sauce, garlic, and Parmesan cheese in a blender.
  2. With the blender running, slowly drizzle in oilve oil until a smooth emulsion forms.
  3. Season to taste generously with salt and pepper. Add more parmesan to taste.
  4. Chill sauce in the fridge for at least 1 hour to let it thicken.
