Caesar salad dressing
Makes 3/4 cup | 6 servings
Ingredients
- 2 -6 anchovy fillets (to taste)
- 2 cloves garlic
- 1 large egg yolk
- 1 Tbsp lemon juice
- 3/4 tsp Dijon mustard
- 1/2 cup + 1 Tbsp (140ml) olive oil
- 1 tsp Worcestershire sauce (optional)
- 1/3 cup grated parmesan (and more to taste)
- salt
- pepper
Method
- Combine egg yolk, lemon juice, anchovies, Worcestershire sauce, garlic, and Parmesan cheese in a blender.
- With the blender running, slowly drizzle in oilve oil until a smooth emulsion forms.
- Season to taste generously with salt and pepper. Add more parmesan to taste.
- Chill sauce in the fridge for at least 1 hour to let it thicken.
