Brownies

Ingredients
- 250 g butter
- 200g dark chocolate (50 - 75 % cocoa)
- 150g chopped walnuts (optional)
- 80g unsweetened cocoa powder, sifted
- 65g flour, sifted
- 1 tsp baking powder
- 300g sugar
- 4 large eggs
Method
- Preheat oven to 180° C.
- Line a 30 cm rectangular or 24 cm square baking tin with baking paper and grease the sides.
- In a large bowl over some simmering water, melt the butter and chocolate and mix until smooth. Add the chopped nuts (if using) and stir together.
- In another bowl, mix the chocolate powder, flour, baking powder and sugar, then add this dry mixture to the chocolate. Mix together well.
- Beat the eggs and mix them in until the brownie mix has a silky consistency.
- Pour the brownie mix into the baking tray and bake in the middle of the oven for 25 minutes. Do not overcook them - the skewer should not come out clean!
- Let the brownies cool in the baking tray, then cut into chunky squares and serve.
