Brownies

Ingredients

  • 250 g butter
  • 200g dark chocolate (50 - 75 % cocoa)
  • 150g chopped walnuts (optional)
  • 80g unsweetened cocoa powder, sifted
  • 65g flour, sifted
  • 1 tsp baking powder
  • 300g sugar
  • 4 large eggs

Method

  1. Preheat oven to 180° C.
  2. Line a 30 cm rectangular or 24 cm square baking tin with baking paper and grease the sides.
  3. In a large bowl over some simmering water, melt the butter and chocolate and mix until smooth. Add the chopped nuts (if using) and stir together.
  4. In another bowl, mix the chocolate powder, flour, baking powder and sugar, then add this dry mixture to the chocolate. Mix together well.
  5. Beat the eggs and mix them in until the brownie mix has a silky consistency.
  6. Pour the brownie mix into the baking tray and bake in the middle of the oven for 25 minutes. Do not overcook them - the skewer should not come out clean!
  7. Let the brownies cool in the baking tray, then cut into chunky squares and serve.
